Carrots

Carrots. A regular of my Veg Box. In fact, so regular, I am running out of things to do with them. I've boiled them, stir-fried them, roasted them, and mashed them. They are starting to bore me.

This is an appeal for inspiration! What carrot recipes can you recommend?

Help me make carrots exciting again!

P.S. I can not abide coleslaw.

If you eat meat, you could make king's rice (you can substitute other kinds of meat for the lamb, even chicken, though it should be bone-in).

Have you tried pickling them?

You could make vegetable stock and freeze it if you have other vegetables you're willing to use. (I put sprouts in my vegetable stock because I always have lots of them.)

I generally use the carrots that come in my organic box one at a time, in things like black bean soup, lentil soup, etc.

Buttered carrots: take one blob of butter. Melt it. Fry sliced carrots in it until just starting to burn.

Raw carrot batons are good for dipping in things.

That's what I was going to suggest. Then you transfer the problem from finding new things to do with carrots to finding interesting new dips.

Soooooup!


Carrot + veg stock + slowly roasted onion + blend = yummy
Carrot + veg stock + orange juice + cream = yummy!

NO no NOOOOOO!

Carrots cooked in the best chicken stock you can make. Then, if that's your thing, blended. Wee touch of milk. Divine carrot soup. Not great for unassuming vegetarian guests though!

Also tastes nice albeit a bit funky made with unusual chicken stock. We've done it with the bones from a chicken tikka and also from some thai glazed wings...you get a curried flavour soup but it's pretty foxy.

which is not, in fact, to say that the carrot and slow roasted onion soup above does not sound divine. I'd still go for chicken stock though.

Equal parts pineapple, apple and carrot. Don't OD on it.

do you like tzaziki? You can make something similar with grated carrot (pressing out the liquid) and yoghurt + flavourings of choice (paprika is nice, some recipes have ground coriander but I'm not a fan, etc) for a dip.

Oh, and you can add grated carrot to grated potato to make slightly different rostis/hash browns etc.

I put carrots in most things that have onions in them. Anything that starts with frying onion (curries, red pasta sauces, chilli, fried rice, soup), I grate a carrot and fry that with the onion for more flavour.

Try this for fried rice:

put rice on to cook, adding frozen peas about ten minutes before the rice is done

whilst that's cooking, fry onions, add tons of ginger, then grated carrot, finely chopped red pepper, and finely chopped mushroom

add a few squirts of a good soy sauce and a sprinkle of cayenne pepper

drain rice if necessary, and stir everything together

fry eggs in pan, stirring it when the white and yolk begin to set

add rice and vegetable mixture just before the egg is completely fried and stir a lot

serve with cashew nuts and tons more soy sauce (and chilli sauce, if you're my girlfriend.)

oooh, lovely carrot salad to have with a curry:

grate your carrot finely. Fry in a little veg oil a generous spoonful of kalonji seeds (nigella seeds/black onion seeds) until they start to smell wonderful and pop and squeak a bit. Tip them (oil and all, this is your salad dressing) over the grated carrot and add a really good squeeze of lemon juice and salt and pepper to taste. Exquisite and quite worth having even in the absence of a curry!

Wow, a huge response to my carrot question! Thank you everyone, and I'll certainly be trying some of these ideas when I get my next box.
